Vanilla Chia Seed Pudding
I am a huge fan of chia seeds, but only when they are hydrated. I know a lot of people like to sprinkle them on top of food for some crunch, which can be delicious, but I prefer to either turn them into a gel that I can drink, or turn them into a delicious pudding! This makes an easy and delicious breakfast - a perfect way to start the day!

Sticky Sweet Almond Quinoa
I mainly eat quinoa as part of a savory dish, but I have always found that good quinoa has a little bit of natural sweetness. For me, this sweet flavor makes quinoa perfect for breakfast.

Spicy Cheddar Bay Biscuits
I feel like it's only fair to warn you - if you are looking for Grandma's homemade secret recipe, this is not it! This is a super easy cheat recipe using the Red Lobster Cheddar Bay Biscuit Mix.
Red Lobster will forever hold a special place in my heart, mainly because of these delicious biscuits. Unfortunately, there is not one single Red Lobster where I live, so finding this mix in stores was beyond exciting. I always buy the big packages from Costco. The more biscuits the better!
I recently had a little situation that made me rethink how I prepared them. I had a dinner guest that doesn't eat butter and, without that garlic butter mix on top of her biscuit, it was not as exciting as everyone else's was! This got me thinking of ways I could tinker with the biscuit mix. I happen to love spicy food, so it was an easy change up for me!

Lentil Noodle Soup
The daughter of one of my co-workers recently married into a family of lentil farmers, which has actually been really lucky for me! They are generous enough to share their lentils, and I swear that they are nothing like the lentils from the store. These have the most amazing flavor and texture.

Gooey Confetti Cake Bars

Winter Fresh Slaw
For the past few weeks, all I have been craving is coleslaw. Fresh, crunchy, and so easy to make. However, I am not a fan of pre-made coleslaw dressing - it just tastes too sweet for me. So, I like to make my own and control the amount of sugar in it. But that doesn't mean I don't like some sweetness in my salad. Pears are a beautiful, crisp, sweet addition to coleslaw.
