Maple Bacon Brussels Sprouts

I never tried Brussels sprouts until I was in my 20's, and only then because one of my best friends swore they were delicious.  Our parents never made us eat them growing up because my mom said that they tasted like bad breath.  Her words.  However, my friend was right; Brussels sprouts can be amazing!


Ingredients:

4 slices of bacon
1 lb. of Brussels sprouts
1 tsp. minced garlic
¼ cup maple syrup
2 tsp. Dijon mustard
1 tsp. ground black pepper
½ tsp. red chili flakes (optional)

Directions:
1.       Cube bacon and cook in a non-stick pan over medium heat.
2.       While bacon is cooking, cut the ends off of the sprouts and cut in half. 
3.       Whisk the syrup, mustard, pepper, and chili flakes together until well blended.  The mixture should be smooth, with no visible bits of mustard in it.
4.       When bacon is cooked, set aside and drain all but about 1 Tbsp. of fat from the pan.
5.       Add the garlic and cook for about 30 seconds.
6.       Add the chopped sprouts and cook, covered, for about 10 minutes.
7.       Add the bacon and sauce to the pan and cook, uncovered, for about 2 minutes.  The sauce should be thick and sticky.
