Pumpkins get a lot of attention in the fall, but we can't forget about the classics, like apple crisp!
Apples:
8 large apples
Juice of 2 lemons
2 Tbsp. cinnamon
2 tsp. ginger
2 tsp. turmeric
2 Tbsp. brown sugar
¼ tsp. chipotle powder (optional)
Topping:
4 cups rolled oats
½ cup brown sugar
1 cup packed brown sugar
2 Tbsp. cinnamon
1 cup butter, melted
1. Preheat oven to 350 F. Grease and 8 x 8 baking dish and set aside.
2. Peel and core apples and then cut into thin slices.
3. Put sliced apples into a large bowl and toss with the lemon juice.
4. Add the sugar and spices and toss to evenly coat the apple slices.
5. Put the oats, brown sugar, and cinnamon in a bowl, stir in the melted butter and mix well.
6. Pour the apples into the baking dish and top with the oat mixture.

7. Bake for 30 minutes. The apples should be bubbling and the topping starting to brown.
